Spice-Drawer Chicken Wings

This dry rub is terrific on any cut of chicken, consisting of entire birds for roasting (make a double batch). This dish is from Where Cooking Starts by Carla Lalli Music.

Active ingredients

  • 1 tsp. dried oregano
  • 1 tsp. granulated garlic
  • 1 tsp. smoked paprika
  • 1 tsp. sugar
  • 4 tsp. kosher salt, plus more
  • 1/2 tsp. MSG, plus more for serving
  • 1/2 cups fried chicken seasoning
  • 4 pound. chicken wings
  • 2 Tablespoon. grease
  • 1 cup mint and/or basil leaves
  • Limes and little Persian cucumbers, cut into wedges (for serving)

Preparation

  • Mix oregano, granulated garlic, paprika, sugar, 4 tsp. salt, and 1/2 tsp. MSG in a little bowl. Set up chicken wings on a foil-lined rimmed baking sheet. Season all over with spice mix. Let sit at space temperature level thirty minutes, or cover and chill approximately 2 days.

  • Location racks in center and upper 3rd of oven; preheat to 375 °. Drizzle wings with oil and toss to coat. Bake on center rack, turning with tongs midway through, till prepared through and skin is golden brown, 30 – 35 minutes.

  • Get rid of from oven. Heat broiler. Broil wings on upper rack, turning every 2 – 3 minutes, up until skin is deeply browned and beginning to char at the edges, 5 – 7 minutes (enjoy them carefully).

  • Transfer wings to a plate, season with salt and a little bit more MSG. Leading with herbs and lime and cucumber wedges, fried chicken seasoning.
